Broccoli Soup

Ingredients:

  • Broccoli, one head
  • Seven ounces (200 grams) of potatoes, diced
  • One onion, diced
  • ¼ gallon (roughly one liter) of vegetable stock
  • Milk, one cup
  • Frying oil
  • Salt and pepper

Preparation/Cook Time: Prep 25 Minutes/Total 50 Minutes

Servings: 4

Preparation:

  • After peeling the potatoes, dice them along with the onion.
  • Add two tablespoons of oil to a saucepan, then for roughly one minute, sautee the chopped onion.
  • For an additional minute, add the diced potatoes and sautee as well.
  • Incorporate the vegetable stock in the saucepan with the onion and potato mixture.
  • For approximately 10 minutes, allow the soup to simmer. Wash the broccoli and dice it into smaller pieces in the meantime.
  • For an additional 20 minutes, continue cooking the soup after stirring the broccoli.
  • Blend the soup while it's still in the saucepan with a hand blender until the texture is smooth and lump-free.
  • Finally, for another 5 minutes, pour the milk into the soup and heat it thoroughly. If a thicker consistency is preferred, you may mix in cornstarch or an alternate thickener. Serve and enjoy.

Stone Age Seed Bread

Ingredients:

  • Pumpkin seeds, 3.5 ounces
  • Sunflower seeds, 3.5 ounces
  • Almonds, 3.5 ounces
  • Walnuts, 3.5 ounces
  • Linseed or flaxseeds, 3.5 ounces
  • Sesame seeds, 3.5 ounces
  • Five eggs
  • Olive oil, ½ cup
  • Salt, two teaspoons

Preparation/Cook Time: Prep 10 Minutes/Cook 1 Hour/Total 1 Hour 10 Minutes

(Resting Time 15 Minutes)

Servings: 1 Loaf

Preparation:

  • Combine all the ingredients to a large boil. The nuts, grains, and seeds are meant to remain whole - chopping them is unnecessary.
  • Cut out a parchment paper sheet just large enough to line the button of a regular bread pan. Transfer the dough to the pan.
  • For approximately one hour, bake the bread at 320 degrees Fahrenheit.

Berry-Baked Oatmeal

Ingredients:

  • Rolled oats, two cups
  • Maple syrup, ⅓ cup
  • Sea salt, ½ teaspoon
  • Baking powder, one teaspoon
  • Ground cinnamon, 1 ½ teaspoons
  • Vegan butter, three tablespoons melted
  • Skim milk, two cups (soy or almond may be used as alternatives)
  • Vanilla, two teaspoons
  • Applesauce, ¼ cup
  • One banana
  • Blueberries and raspberries, one cup

Preparation/Cook Time: Prep for 15 Minutes/Cook for 40 Minutes

Servings: 8

Preparation:

  • Preheat the oven at 375 degrees Fahrenheit, and grease an 8 x 8" baking pan using olive oil cooking spray

  • Mix well with the oats, baking powder, cinnamon, salt, and maple syrup in a small mixing bowl.
  • Whisk the milk, applesauce, butter, and vanilla in a larger mixing bowl.
  • Slice the banana, then evenly arrange it on the bottom of a prepared pan. Place ½ cup of blueberries in the pan to fill in any gaps.
  • Cover the bananas and blueberries in the pan with an even spread of the oat mixture, followed by the milk mixture poured over the oats.
  • Garnish the leftover berries on top.
  • For 35-40 minutes, bake the oats until they turn golden.
